I just dug some dirt and found the place to put your horse name. For my current version of the game (1.2.5 GM) it's in line 557 of the text_ui_soul.xml - tho I've got the GOG release, so... might differ.
Just go to your game's installation directory and unzip the {yourlanguage}_xml.pak file. For me that is
.\Kingdom Come Deliverance\Localization\english_xml.pak
Within you will find the text_ui_soul.xml, which you can edit using some editor like Sublime or Notepad++. Just search for "Pebbles" and you should find the line. Mine was
<Row><Cell>char_488_uiName</Cell><Cell>Pebbles</Cell><Cell>Pebbles</Cell></Row>
Now just change the name, rezip all the files into a new english_xml.zip, rename your existing english_xml.pak into something else so you have a BACKUP(!!1eleven) and rename your .zip into .pak
There, you're done.

Don't forget that any KCD update might replace this file - or change and break it. If your names are messed up after an update, remember that you fiddled around ;-)

so ive tried this method but as soon as i close the notepad even though i press save it resets it
If the File is somewhere inside the Programs or Windows Folder the Windows Security settings may prevent changes to it. Unzip the pak to some Folder that is not protected e.g. make a new Folder in C:\ or something. If that is not your Problem i have no clue. You can also try and make a mod to rename some horses, but i don't know how to make a mod. But on the nexus there are a few mods that change horses, maybe you can donwload one and look in the files how that was done.
