Dark Souls is as artificially difficult as it can get, nothing really difficult about it, just memorize and stat up against extreme multipliers of hp and dmg. The weakest, cheapest, easiest way of making anything "difficult".
Later on you need Training, Armor and Skill... he is not an untrained peasant he is fairly skilled.
While I am enjoying the game for the most part, despite it being the buggiest "large title" release I have ever played. I think the combat is a huge hit and miss. I've had plenty of good fights where they were fun and "even" but I've had just as many where some random PoS bandit in the woods will nine strike combo you, block everything and never run out of stamina. Plenty of nearly nude bandits have had these traits too, there is no way thats intended, if it is whoever decided that should be shot from a cannon.
I know what some people will say, but I fully believe that some NPC's are bugged. And with how awful the game is in its current state regarding bugs, anyone who denies that being possible is just dumb.

On a serious note. As you may know your skill for everything slowly progresses as you use that skill. Soo maybe go do some practice fighting and come back later or kill that dude with a bow or kill him while hes asleep or poison his food or wine. there are so many options. Dont just charge in head first if you cant beat him. Think. plan.
Start the questline at Rattay, there you can treat yourself to some proper training. With that your personal and ingameskills rise up pretty fast. In the beginning a highwayrobber with linencloth ♥♥♥♥♥♥ me up pretty bad, now i´m slowly starting to clear banditoutposts. Once you actually manage to chain some combos it REALLY gets interesting!
