Fighting in the dark
Why can't we block while holding a torch? If I'm holding my weapon in one hand I can block but if I have a torch in my other hand suddenly I'm completely defenseless? Meanwhile my opponent can see in pitch darkness just fine without a torch and is able to block and parry to his hearts content?

well they can see just fine because you are holding the torch for them:)
seriously though, yeah, it's a bit unfair. if you absolutely need to fight in the dark, use nighthawk poition

My 2 cents:

1) Nighthawk potion should be totally removed from the game, I've some issues with alchemy. I recognize only poisons and lullaby, spirits and digestif potions as valid .... but night vision ... its freaking magic potion.
2) In total darkness, enemies should not see you, they should be trying to find you, flail around but you should be able to sneak away from them.
3) Enemies should use torches in darkness when fighting. At least one of enemy group.

Feel free to disagree :)

All valid points. I do admit to using the nighthawk potions when I'm forced to do something in the dark, can't frigen see and the torch gives you away. And don't forget padfoot....

Implement lanterns and have some enemies use them in the wilderness and whilst it emits less light, it lets you see better and has less detection than a torch gives off.

Even better is stealthy modification of the lantern like covering it with a thin cloth to dampen the light for when you want to sneak but still see things.

To make the gameplay even more interesting, allow torches and lanterns to decay over time so there is a benefit of buying and using multiple ones... Allow enemies to 'drop' any torches or lanterns in their hand if they get attacked while in normal state like with a arrow, so they have to fight without a light source in their hand (if you give them a chance they could hook the lantern to their waist and arm a shield to fight you...)...

Or a easiest fix of all... Enable us to equip a shield and a torch at the same time, maybe only with small shields with a strap.

You could revamp Nighthawk potion to 'raise clarity' in the eyes to allow you to be sensitive to light better, or maybe call them 'Cat's Eye' potion.

And make night time more 'managable' with the moon granting some decent light source in the dark, unless it's raining or such of which it should be cloudy and be pitch dark.

but.. I could block while I was holding a torch? I fought full battles at night where I won by doing the master attack and all

or do you mean holding ONLY a torch?

One thing I've noticed with Nighthawk is that it gradually degrades...things are bright & visible right after consuming it, but toward the end of its duration, things have progressively dimmed and you get almost back down to normal visibility. Not saying that's bad or needs to be changed...but does mean that one can go through a lot of Nighthawks during a night's worth of mayhem and mischief.
