You can train scum with the guy that gives you your first sword tutorial.
When he says to hit him multiple times in succession, just hit him once, block, hit, block, hit.
You can hit his ass until you're bored

train with sir Bernard in rattay, with him you can learn alot and improve your skill level.

Pretty sure they removed that. They also made the guards stand closer to the wall so you can't get behind them so easily.

From what I can find out yes you can't level up from beating up his body on the ground anymore same with all other ways too it seems like punching floating bodies in the river.

You also don't get any XP for using an arrow to kill an unconscious person.
