How is a making a noise, within earshot but out of sight of the guards (that they would then either call backup or investigate), not realistic?
It is UNREALISTIC that guards aren't capable of hearing noises in the distance, and that Henry isn't capable of picking up a throwing a rock...

That being said, and to answer your question:
Because, unlike in a videogame, throwing a rock doesn't produce a sound that is comparable to someone walking or trying to sneak by.
Guards should turn towards the sound for a second, that's how our brain is wired to behave when hearing a sound, but that's it.
Additionally, soldiers on guard duty, do not simply leave their station individually to go have a walk in a bush where they are out of sight and out of earshot from their comrades, allowing anyone that might be lurking in the shadows to pick them out one by one. Especially in a time like that of the setting, with bandit, looters and foreign mercenaries roaming the land.
