The waldensians quests is one of those where you really can't dawdle, you have about a week max to finish the quest, beginning the moment, repeat! the moment you accept the quest from Sir Hanush. After the quest time is up, I assume the vicar just leaves.
Mabe you have a save from a day earlier, and don't mind going back to that moment.
After listening to the evening prayer, you can finish the quest and turn it in before the timeout in the afternoon.
Always save before starting the these parts of quests so you can go back and do it again.
Tip
Use guides and youtube before playing some quests to understand what is expected.
