Meaning avoid at first and steamroll everything later. Fighting with more then 2 enemies doesn't work to well for now.
They actively try to circle you.
This is done as some part of combat becomes easier later on, and you should gain more knowledge about fighting after enough playing (thus gaining better equipment and skill levels).
If you are to fight several bandits (your primary enemy at the early/mid game).
Lets say you fight with a short sword and shield, against 2 people with the same gear and an archer...
You need to be aware of your surroundings, the archer won't fire at you unless he can get around/behind you... so keep your foes between him and you to effeciently neutralized him.
Now you got two guys comming at you, something that can be hard to fight against if you are not used to it... it's important to remember to keep moving, that you can switch target with the tab key (↹), and that you can disengage by sprinting...
Also remember that your stamina works as a 2nd life bar, that allows you to not take much damage, but instead let your armor take the hits.
By remembering those factors, you should be able to back away (keeping the archer out of the fight)... and slowly working the opponents down.
Masterstrikes (defending perfectly) either eats the stamina of an opponent, or severly hurts them, so you should try and aim for that... as well as follow up on the episodes.
When you are down to a 1 vs 1 (archer is still behind) you should be able to make easy work of him.
That is how I would suggest you kill them.
Now please note, that if you can get the archer down instantly before you engage the other two, then you should be more at ease and should be able to more easily manuver around (focusing on perfect guards/master strikes).
If you're the one initiating the fight (i.e., bandit camp or whatever), then yeah, try to scout it a bit and shoot one or two unseen before engaging in melee. For Cuman camps, prioritize the guy wearing the bright red or yellow caftan. First, because he's lightly armored and hopefully your arrow will one-shot him; second, because he's probably the archer of the bunch.
Even in woods, usually there's a road/trail or open area nearby. I tend to backpedal towards it in melee and fight there. That way I keep track of them better, and don't get myself hung up on a tree or rock or whatever. If I have my wits about me (which isn't guaranteed), I try to take out the lesser-armored guy first, hoping he'll go down more quickly.
The post above about using a mace has merit against groups which have some folks wearing plate and mail, which defend against Stab and Slash damage. A mace, however, does Blunt damage, so whacks everybody. The downside of the mace is it's relatively short reach, no handguard, doesn't block well. So also use shield, and don't be afraid to get up close: Clinch is your friend. Clinch/stab, then knock them on the noggin with your mace. Headcracker a good perk for this combat style. You might not kill him in one blow, but good chance to knock him out; again, thinning the pack quickly.
It's a pain to train up Mace skill, however, with Bernard. Unlike the wooden swords and axes, the wooden training bludgeons do damage. So early on you're having to heal up a lot from Bernard's whacks...later, the challenge is to keep fights going for a while to get Mace XP without wrecking Bernard, lol.

If you've played Witcher 3 it's like a clumsy slow motion version of that - the strategy is the same, attack from the outside never letting the group surround you or form a side by side line in front of you.
Up your alchemy and coat arrows and weeapons with bane potions - one good poisoned stab and kitting will kill an enemy or two while you are fighting another. If you can prepare to go into a big fight use a vitality potion(resists damage) and a bucks blood potion(quickly restores stamina).
Theres always that one bellend isn't there.
