Lots of people, and I mean LOADS of people pick this game up and expect combat like Skyrim, as soon as you exit the cave you can pile drive dragons into the ground, not the case with KCD.
I remember after talking to villagers I headed off over the road followed some blood foot prints to a tent where I could hear voices, I drank some Saviour Schnapps and snuck up near the camp one bandit with full armor and sword came after me followed by the lesser and was killed.
So I loaded the save and decided to try reporting my finds to Bernard see what happens, he told a guard to go with me.
So we returned to the camp I commenced fight with one the guard with other. Both killed I looted them there was no Ginger. The guard took off while I was at the camp.
I looted them and found this knife thing.
As I headed back to the Horse farm I saw Bernard and some guards running across the road back to the camp area i just was at.
I found this knife in one bandit that was a key. So I questioned a villager about it and said it belonged to Ginger.
Went back and reported to Bernard who basically gave me an ear bashing about following orders and then he sent me to go see Radzik who then instructs me on the next part of the quest.

After completing A and B, but before doing C, go back and speak to the captain! He’ll tell one of the guards to go with you to check the woods!!<< which just so happens is exactly what i did anyway. :)
Thanks for the guide but please clarify about which pair of bandits you are talking about?
The two at (A) if A, is the first pair of bandits that you come to see when you follow the path of blood from the horse ranch to the woods and you listen to a conversation long enough to see that standing bandit knifes and kills his wounded laying down bandit friend whom got stabbed by Gingers Hoof which becomes a quest item that you must get?
If, that is what you are referring too then I agree with you that you can get help from Bernard at the horse ranch! He and a few men will help you fight that bandit and then you can loot and get that quest Hoof.
Now, if you already have the Hoof and you report to Bernard and he tells you to go and find Ginger.
So, if this is now (B) and B is for you to find Ginger so you will go to a few coal burner camps and once you find the camp with the twins that help to feed Ginger and they hid him you will find out they won't tell where he is because there are another set of two bandits looking for Ginger too and they want you to kill them before they will tell you were Ginger is hiding.
As even the guide says, you have two options lie that you killed them or go kill them.
Maybe a third option, is to just go North of that camp and find Ginger in the hut without having to fight those two bandits but doing so you will also have to lie to Ginger that you killed them if you want Ginger to leave and go back to the horse ranch.
Now, if you are talking about bandits (B) then I disagree with you. I know no way to get help from Bernard to fight those two bandits and I can't see him and his men riding miles away from the ranch to help you fight those two bandits that are also looking for Ginger and that was my whole point to this post. No disrespect intended either way!
I might even try to load a save if I can find the point where I talked to coal burners and they tell me to kill those two bandits that are looking for Ginger so instead of me killing them you are saying I could go back to Bernard and he will have one man come with me to fight those two bandits? Is that so?
Anyways this has gone off point . Enough lol.
The quest part I'm refering to was called " The Hunt Begins" I'm long past that now.
That quest leads into Ginger in a Pickle as OP asked about.

His real issue, as someone pointed out, was that he must be underleveled and undertrained if hes getting two shot by barely equipped bandits.
