Yes these is a mission were you go to the bathhouse with him his clothes are in the chest

You can loot the chest of NPC when they sleep. They do remove their daily clothes on put them in those chest to sleep.
I own something that is called ratzig hood, from this ratzig guy and you can definitly get hans capon clothing during a quest.

The quest you refer to is "Cloth Makes the Man", but you don't get his "normal" clothes, just some old ones he doesn't wear anymore (or at least that's what he tells you).

When doing the bathhouse quest, sneak his stuff out of the chest. He carries the best two-hander sword in the game also and you can snag it too then.

Guys, the OP talks about his ARMOR. Full-plate metal pieces you wear not to be killed by sharp metal sticks other people carry. Not CLOTHES, the wollen thing you wear that keeps you warm.

At the bathhouse you can steal his CLOTHES. Orange vest, red hood, green pants and his sword. Not his full-plate mighty armor he wears later in the game.

Hans' armor is the decorated plate, you can get it in the game.

Hans Capon wears the following plate armour during the end game quests:
Magdeburg Cuirass
Augsburg Plate Chausses
Augsburg Plate Pauldrons
Nobleman's Gauntlets
