How do I perfectly parry stabs?
I can only parry attacks that don't come from the center.

You can riposte stabs, but it's far more difficult. I have above average reflexes, but not the best. I'm able to perfect block them every time, but the actual master strike is hard indeed.

Simple. Watch the actual WEAPON, not the icon to hit block.

You don't seem to understand what I am saying, I want to match the direction of the enemy's sword with mine, but I can't do it. I can only do it when it swings from above, below or from the sides, but not from the center.

Henry blocks automatically from any direction. You control only attack direction, AFAIK.

Holding block key puts Henry into autoblock mode, but enemies can break through with skill and combos.

Pressing block key when enemy's weapon started to move (before green icon appears) causes Master Strike.

Pressing block key when a green icon appears causes Perfect Block (which gives an opening for a follow-up strike).

Hitting block key otherwise does not work - this can be confusing after games like Mount & Blade

I don't know, when I block an enemy from the same direction he is attacking, I always end up with an automatic riposte.

umm, perfect block doesn't require direction, you'll block attack from any direction if you do perfect block.

Otherwise - i don't actually know how to block stab

Well, it is possible that there is an increased Master Strike chance from "same direction", this needs either careful testing or Word of God

"Block stab" - you mean Master Strike? Done by hitting block BEFORE little green icon appears

Can also be done by hitting block as you get hit and hear a clang on your armor (because they usually go for a second strike at that moment and you intercept it almost automatically)

This is part of the reason why it's better to disable the green indicator (IIRC "hardcore mode" does that).

I know I can block from every direction, but I am referring to parrying attacks, which has to be done from the same direction as the incoming strike.

If by "parrying attacks" you mean Master Strikes - then no, it doesn't have to be.

umm, fyi you can't block master strike(riposte), even Captain Bernard said so.
Block stab is block stab, you know, that RMB attack is stab/pierce/thrust, so how do you block it since it's usually center point and i'm not sure how you can defend it(again - not perfect block)

Absolutely same as any other strike, by holding block key beforehand, or by hitting block key in time. If you are too late - you are too late, as simple as that

I guess we have a "Will Will Smith smith" situation

Hitting key in time is a perfect block, which is omnidirectional.
But in 'regular' situations you've gotta choose which direction to guard, so .. how do you guard that middle point? Except you can do it guard is active, because simply swinging your mouse around won't position in the middle anyhow, unless you initiate pierce attack.
