How to train Vitality?
I know, I have seen a lot of videos where advised jumping and jumping over the fence. But it seems like a lengthy process. I tried to sprint constantly, fist fight with Bernard, but either I got small amount of experience or none at all. So is there a faster way?

not really, it is one of the most grindy stats to lvl.

Oneway is to pick nettles keep picking them and your health levels will rise.
After the intro, you find yourself in conversation with your mother. You’re in the town of Skalitz in Bohemia, and the year is 1403. Your responses during this initial dialogue sequence will affect the default statistics of Henry, the game’s protagonist. It might not be entirely clear what will change as a result of these choices, so here’s how all that breaks down:

“We talked in the tavern.” – this increases your speech.
“I was at the dance.” – this increases your agility.
“I went to Bianca.” – this increases your vitality.
“I worked in the forge.” – this increases your strength.

EDIT:
Hunting .
Hop, and sprint around the forest looking for animals to poach. Kill.
Most efficient grinding there is.
Then run back to cook in fire.

Unless you feel like finding a autokey program to press your spacebar every few seconds while you AFK for a bit, hunting will be the best way to raise your vitality honestly. I've restarted my game twice now and I used the same method you did, fist fighting with Bernard.

My second time I decided to focus on hunting because it raises the very important vitality stat as well as your bow skill, and I far exceeded my vitality gain hunting vs fist fighting Bernard in about roughly the same time spent doing both. The woods almost directly south of Uzhitz has a very good area for hunting rabbits when you are starting out, as I believe they are forcefully populated for a quest.

I found that horseback riding also increases vitality. Dont you know how much? And my last question. How about the books. How much experience do they add? Thanks for your time. All.

I never really noticed the vitality gain from riding around on my horse, and I believe its very low anyways since you do a LOT of riding around on your horse <.<

Experience books are great, especially at lower levels, they can boost your levels by 1-2 per book. I recall gaining at the very least 1 level from reading each tier of readable skill books, but I do not know the exact amount sorry.

Either way, reading the skill books is good, because some of the reading perks are nice to have.

But what for? I always just let vitality level itself. It seems to increase from almost every action in the game, but very slowly. I gained new vitality levels mostly from bow shooting hares, for some reason.

I've had surprise Vitality levels from riding and from archery hunting, but also I think from training with Bernard, can't remember which practice weapon Halberd or unarmed maybe. Experiment with Bernard and watch the progress bar closely.

1 Find a belly high water, river or lake.
2 Find a victim knock it out.
3 Take it to the water and throw it in.
4 Beat with your fists.

Floating unconscious body can be hit with fists, harder to do that on the ground

Train with Bernard, but don't attack. Only dodge (space bar + left/right). That raises vit really fast.

So far the best way is to run with jumping.
