Rattay Hunting Trainer won't train me? Any ideas appreciated
When I ask for hunt and bow training, he says 'are you pulling my pizzle, after what you did round here?' and refuses. I have not done anything and this my first interaction in the area. Is there anyone else who can train me? how can I win him over?

lol, go to the hunter in Rattay and ask to be trained.
he is up near the top on the left, refer to Rattay map.
He can also be used to train you with hound training.
Alternatively you can train for free for bow and arrow at the archary field Rattay just have to buy training arrows.

You have committed crimes in Rataje which have reduced his reputation with you.

You can restore reputation by doing (successful) main quests and sidequests which favour his sub-faction or Rataje overall, but don't disfavour him.
By paying indulgences into the boxes found in the churches.
By accepting, rather than dodging punishment for your infractions, especially imprisonment, rather than talking, fighting or running away from your responsibilities.

Crimes can be - trespass, failure to carry a light after dark, theft, poaching, lockpicking, pickpocketing, assault, murder, riding people down with your horse, shooting 'at' people etc. While being 'caught' makes these effects immediate and at full strength, especially for direct victims, and witnesses. Avoiding direct suspicion still reduces your reputation as a 'stranger', and therefore among those most likely to harm the community.

Being more careful about what you do, how much/often and how competently will be beneficial to avoid constantly running into these issues. You never have to break into someone's room at midnight to ask them a question. Wait until morning. You mostly don't *need* to steal, so be selective about what and how much/often you do. Try to pick your moment so you aren't caught red handed.

If you are under a direct time pressure or have a particularly 'special' set of stolen items on you... then run, lie, boast etc to keep going... but if you have three apples and an onion... pay the fine, or agree to a few hours in gaol. The more often you commit infractions, the more often you will be challenged, and the more often you will be caught in flagrante delicto.

Your reputation is very low, i assume.
Fore reputation restore, punch a guard/do not light the torch after 21 on evening in town and then agree with imprisonement. (do not pay the fine)
For reputation raise with soldiers/citizens:
https://forum.kingdomcomerpg.com/t/spoiler-all-battle-spawn-points-map/60508
Help soldiers/traders on Battle-Spawn-Point #18 on the map and restore reputation with Rattay soldiers/citizens.
