The Chocobo side quest to get the blue and red Chocobos
I've been trying to get the blue and red Chocobos by the Chocobo minigame in the Chocobo Forest. So far I've played 17 games (using 1020 Gil), I think my Chocobo is at Beak Level 5 and I think I have collected 92 points but I only have 1 Chocograph (with only 1 clue for the first hidden item and I've been told by the game "I'll need a hint before I start looking") and 1 Chocograph Piece. Is there a certain Beak Level, total number of points collected or games played until I get the next Chocographs or Chocograph pieces? Also when exactly do I get the blue and red Chocobos? What happens if I exchange points?

You need to activate your Chocograph on the World Map. To do so, either talk with Choco in the Chocobo Forest or press whatever button you have for the menu when you're on the World Map and choose the top option. Go to the Chocograph you wish to activate and press the action button. Now you can look for treasures on the World Map, but only at the place displayed in the Chocograph. That's also how Choco turns into other colors, like blue.
As for more of those and the pieces, you just have to keep digging. Sometimes, you'll find several at ones and sometimes, you can look for hours and find none. And you can exchange points for items, like equipment or Tetra Master cards.

Keep searching in the first choco-forest ^^ had mini 3 chocograph to dig out :3 Hang on. For the blue chocobo u can have the color with a chocograph called "Secrets Lands" Terres secrètes in french lol ; sorry for my bad english.

I dug out 9 Chocographs at the first forest and got my beak level to 90. I can tell you I was able to get more it seemed as my beak level went up but after that 9, I wasn't getting any more.

Thank you for the answers to my questions. I now have the red Chocobo and I might want to continue to get the dark blue and gold Chocobos. I have another question about things I got from the "Between mountains" Chocograph because when I opened the treasure chest for that it said at the end "Discarded items over 99." What does "Discarded items over 99" mean? I think it means that it automatically discarded something but I don't know what it was and I quit the game straight after that message appeared (I saved just before I got the treasure chest).

You can have only a maximum of 99 if any item. Let's just say you have 85 Potions and you find 20 of those in a treasure chest. Fourteen of those will be stored in your inventory, the remaining six will be thrown away.

I now have the Gold Chocobo and I have gotten all the Chocograph treasures (after which I got the Diggin' It achievement) and I'm now looking for locations where I can use Dead Peppers to get other hidden treasures. I have seen YouTube guides for each location where Dead Peppers can be used and I am stuck on getting the one with Ultima Weapon because most of the videos I have seen for it show that it is between 3 isolated icebergs near the beach near Esto Gaza. When I have looked for it near Esto Gaza I can only see a lot of icebergs which are very close together and not 3 isolated ones. These videos are from the PlayStation vesion so I thought they might have changed it in Steam. Could anyone help me with finding this Dead Pepper location please?

That's actually something rather spoilery. To put it in non-spoiler terms - that big cluster of ice bergs turns into what you saw in the vid (the three smaller ice bergs) in the very last part of the game. It's only accessible on what in the PS1 version would be on Disc 4. Basically, keep on playin', it'll probably be the last treasure you get as a result.
