Yeah, I buy the best items from the shop then press Optimize. But no, I haven't gotten out of my way to do extra fights. I just follow the story and go forward.
That's your problem then. Take some time to grind up some of those skills in your equipment and level up. JRPGs from this era assumed you were taking time to explore and grind a bit once in a while. You can quickly outpace the level balancing if you rush it.

it doesnt matter how much stars you have if you get hit by Freeze ir Burn etc you are dead in 1 turn
Also, always have your casters in the back row under the Order command. Even sometimes in some cases you'll want all your members in the back row to take far less damage. For example, when Zidane fights Black Waltz 1, I always switch him to the back row before the fight as you take far less damage and the eventual Trance damage is the same.
The game isn't just "overlevel the content" or "press optimize" - its about using the right gear and order setups. Also learning what abilities to learn ASAP and what abilities that may be more novelty are essentially worthless in harder fights.
the optimal armor is rarely best. i only use optimal before a boss i anticipate having issues with.
in ALL battles i need to absorb shadow cause i use Vivi as my healer via doomsday but theirs no hi-tier armor that absorbs shadow damage for everyone and not enough accessories for absorbing shadow to go around for that, so some characters are forced into using the ninja gear.
oh and grind your skills out. thats a issue with your setup. skills are integral to the game, i only change once ive learned the skills and.
and obviously dont sell all old equipment despite temptation. just the plain ones with the skills mastered that cant be upgraded (or you already have the upgrade).
