A very complete guide is required for all the missable achievements (13 missable) and you need to "speedrun" the game for one of them (Ultimate Sword : reach the last dungeons under 12hours)
So if you don't want to "ruin the experience" play the game normally for the first run and follow a guide for the second

When I played FFVII for the first time I did so with no guide and ended up only missing 3 small things. If I found them I could have still looked up what I missed before the final fight. This lead to a whole second playthrough. I wanted to avoid that if it were easy but I don't want to ruin the experience.
The aim of the guide is to speedrun the game (for Excalibur II) while collecting all missables on the way and staying at the lowest level possible, all in order to create a save as complete as possible. Obviously easier if you use speedboost and don't care about leveling up early.
You can also check Rebirth Flame's Missable Items FAQ for a more detailed list of missables: https://gamefaqs.gamespot.com/ps/197338-final-fantasy-ix/faqs/21725
If you look at the bottom of the guide there is an item location guide step by step as you play the game. Discs and areas are labelled. Have fun! This is my fave game evar
