Pause = Backspace
Can't remap Up/Down/Left/Right (WASD), Pause (Backspace), (Enter), (Esc).
F1 = Game speed up
F2 = Battle assist (always full ATB/Trance, full HP/MP)
F3 = Attacks do 9999 damage
F4 = Zero random encounters
F5/F6/F7 = Config menu boosters (abilities mastered, max level/stones, max gil)

Ideally, I'd like this control scheme:
A = L1, rotate camera
Q = L2, fix camera
S = Left
D = Down
E = Up
F = Right
H = Square, Card/Hide battle UI/Moogle
J = X (American)/O (Japanese), Talk/Confirm
K = O (American)/X (Japanese), Cancel/Run
I = Triangle, Menu/Switch characters
L = R2, change camera
; = R1, rotate camera
P/Enter = Start, Pause
Tab = Select, Info
Space = Toggle speed

Still no insight on a program to remap keybindings for a specific game. New question: How to get back to main menu in-game (ie soft reset)? They couldn't have just added in an overlay menu with Esc that lets you toggle the booster options, reset to main menu, and quit game?

How did you change keybindings ??
Well, it's a tricky thing, because some buttons can't be changed, but to change those that can be, go to the in-game menu (earliest possible opportunity is after the opening cinematic, when you start controlling Zidane).
Go to the Config menu.
Set Controls to "Custom," then press Enter.
Press Backspace once you're done configuring buttons, then the new Cancel button to exit the button mapping menu.
It's such terrible game design.
EDIT for some notes:
Pause (ie Start button on controller) is always mapped to Backspace.
Confirm is always alternatively mapped to Enter, regardless of what you change it to. On the title screen, the game reverts to default controls, so unless you remember the default control scheme, use Enter to start/continue/load games.
Help (ie Select button on controller) is always mapped to 1, as in the Number One.
