I expected DS3 being too easy after coming from ER DLC but I felt that the challenge in DS3 was a lot more... I don't know how to say it, "tangible"? For two reasons.
First, very few enemies in DS3 have some big stupid barely dodgeable "might as well be undodgeable" AoE wipe attack or insane MMO-level screen-filling particle effects you either need an item or some crazy dodge pattern to avoid. Like for example, it took me quite a few tries to beat normal NG Malenia on my Greataxe STR build and it mostly felt like it depended on how close I was until her Rotten Slashyness decided to use the infamous Waterfowl. Or, to me, the hardest part about the Dancing Lion was the fact I couldn't see jack, locked or unlocked, because there was so much crap on screen.
It took me WAY more tries to beat the Nameless King than either of those two bosses, but I always felt like I just plain messed up a dodge or got greedy or something and not "oh crap she's doing the thing again" or "ffs I can't see". I just beat Sister Friede today and it took me a decent amount of tries, but again, I knew why I died every single time.
Second, I think Elden Ring puts a lot more focus on your build, like I know it's a staple of FromSoft games that technically every playstyle is viable, from spells/incants to bonk or dex poking, but I felt like it's a lot easier to become just ridiculously OP in Elden Ring with status effects and the myriad buffs and so on. DS3 is a lot "cleaner" in that respect, you're given a solid challenge and good tools to overcome it. In Elden Ring, you're given ridiculous challenges and ridiculous tools to overcome them.
I have to say I liked the type of difficulty in DS3 more than ER. Elden Ring is still a great game, and part of me enjoys the over-the-top craziness, but if I had to choose, I'd say DS3 comes out on top.
So to answer your question, I wouldn't say DS3 is "harder", but it's challenging for different reasons.
there are few exceptions of course (Malenia can reset her stun sometimes so it's not safe to use this tactic aganist her), but most of the times this rule is valid for 3/4 bosses of the game
Now for the reasons I recommend Pyromancer. It starts with a decent stat spread to try out a variety of equipment and spells from the get go, allowing you to use early levels on things like vigor til you figure out what you want to do. Early on, the fireball spell it starts with is great against a number of the trickier enemies you can encounter early on, either by hitting a weakness, guard breaking them, or just plain ole hitting them at range. If you get lucky, or farm the tutorial area a bit, you can get a "Cleric's Sacred Chime" which has an hp regen skill, and Pyromancer has enough faith to equip it without having to level up. Also of note, it takes very minimal investment into the casting stats to gain access to the majority of the bufffing spells in the game, which can benefit even a non-caster style.
As to weapons, that is going to come down to personal taste more than anything. As while a few weapons do have unique skills, its no where to the degree of Elden Ring. So I'd imagine if you liked an Elden Ring weapon type's base moveset, odds are will probbably gravitate towards similar weapon types in Dark Souls 3. You will end up relying more on the basic attacks than skills for most weapons in general.
