Suggestions for weapons (trying to substitute claymore)
I finished the game for the first time playing as a knight (quality built). My favorite weapon, as everybody suggested, was my claymore (now +10). Claymore made the game look easy at the end, managing to obliterate most of NPC and Bosses in first attempt (even the though ones).
Now I’m playing for the second time and really want to test other weapons, but, every time I pick a new one I fell frustrated.
Weapons “heavier” than claymore fell too slow, and “lighter” ones fell impossible to make damage, even when used in both hands.
Anyway, I just wonder if anyone could give a suggestion for news weapons. If it’s not ideal for my built, no problem, I have the patience needed to reorganize my character.

I've been alternating between the Astora Greatsword and the Executioner's Greatsword. The AGS is an Ultra Greatsword that more than makes up for the weight and slower swing time by dealing a ton of damage, and it has B scaling in STR and DEX if infused with a Refined Gem at +10.

The EGS is a greatsword that deals solely Strike damage, swings fairly fast, and refills FP each time you kill an enemy. It deals a hefty amount of damage and has B STR and D DEX scaling at +10 uninfused.

Both are pretty good options, but if you're looking to have a bit of fun you could also try the Poison infused Rotten Ghru Dagger. It's quick and does less-than-ideal damage but it deals innate poison damage so infusing it with a Poison Gem really builds up the poison quickly.

because all lighter weapons (straight swords, rapiers, daggers etc) are better one-handed

Weapons for fun? Go for katana (i suggest onikiri and ubadachi and the frayed blade).
Weapons for Easy game? Twinaxe or sellsword twinblades

I used to go for strength builds with huge swords, not into katanas usually but Chaos Blade is my new love for sure. Weapon art makes you have a small dash with long range and it has S dexterity scaling (if upgraded of course normal would be A). Totally recommended.

scaling letters don't mean anything
It's Astora Greatsword, Lothric Greatsword or Vordt's hammer for me. Every. Single. Time. The holy trinity. I hate that some weapon are so OP and good, and yet I love them.

Ahem... Maybe try whips? They are very long and fun. Or maces. Small but fast and have Endure.

Like strength weapons? Try the Great Axe. It's a weird one but I'm a big fan. Oddly effective in PvP even with it's short range, apply lots of pressure.

xd. "lots of pressure" is 42 frames attack opening during which you can insert any light weapon r1 and roll away?
Exile GS and Harold GS gave me immense pleasure. Great move sets and good training wheels for pvp

that's why you always have an offhand. I use a heavy cestus for parries and perseverance for when that happens.

when you git gud every weapon is viable.
