my wife has the same problem. She likes these games but she hates being invaded. she played them all offline. she been wanting to play coop with me but dosn't want to be online. this mod solves that problem. Her and I played all of elden ring with the former mod.
Can still invade you in the mod

In Elden Ring's Seamless mod, invasions were non-existent for almost 2 years.
I remember a lightsaber clad person saying he was going to invade Seamless users. He never figured out how to.
With an update, invasions were added but were enabled by default.
Disabling Invasions was as simple as changing the setting in the .ini from 1 to 0.
Once invasions are turned off in the .ini you still can't invade no matter if you know the users Steam ID and matchmaking password. It just won't work. Good luck trying though, but you can ask Darth Invader how that turned out in order to save yourself some time.
That being said, if it's built in any sane way you won't be able to join as an invader because the host won't accept a connection with that role. You can 100% still force join someone as a regular phantom though. Again, I've done this myself and there are streams of people doing it (though, they did it to harass streamers. A ♥♥♥♥♥♥ thing to do to be fair). You can also still affect other players even if you can't damage them, e.g. deathblighting them (again, like CIN did to grief)
I have no idea whether or not you can join as a literal invader because I didn't try, but I hope not because it'd be indicative of a poorly-programmed system
