For a number of builds, you can expect to be on the defensive quite a bit in the first phase. For starters, just try and focus on surviving the chaos, and taking advantage of when they split up. Once you start getting comfortable in the chaos, then you need to pay attention to which one is which. This is something that kinda needs to be done in any boss fight that involves more than one enemy.
By the time you are comfortable with the chaos, and able to track which Abyss Watcher is which, you should have a good idea of their move set, some of which is parry-able if you are willing to risk it. At this point you should be able to start making it to phase 2 more regularly, and hopefully with more resources than prior attempts.
I wouldn't really recommend Ariandel to someone thats new and struggling with Abyss Watchers. It is quite literally throwing fresh meat to the wolves. Not to mention the Corvian Knights later on too. Though who knows, maybe they will have better luck against the wolves?
