at what point should i start the DLC ashes of ariandel
i just beat the Crystal sage and abyss watcher

i finished it after i beat the final game boss, but u could just start after u find gael

You can start it right now, when it seems too difficult, then return there later.
At it's begin you can read a developers message that you should have been in Castle Lothric . That's related to the difficulty and means maybe at least SL 60 or so . But experienced players are going there much earlier.

When you have about SL80 (you should have that when you have completed Lothric Castle), you can start Ariandel and then the Dreg Heap-TRC.

is this like DS1, after beat Gwyn i wanna try the DLC but it made me play NG+ right away

No, that was only in DS1. In DS3 you get a choice after beating the game. You can start NG+ right after, or you can say "no" and start it later from Firelink Shrine.

That's not a silly question, I mean in DS1 you couldn't teleport back. But no worries, in DS3 you can go back.

Not a problem when I arrived at the first bonfire in Ariadel I just went back to the main game.

It's definitely worth going in there as soon as you unlock it, if you can make it all the way to the top of the guardtower you get a shop ash that among other things gets you access to one of the best armor sets in the game (plus a 100% physical resist shield with passive health regen equal to a maxed-out Blessed weapon)

(It's a tough mission that might take a bit of practice, though... you'll probably need to run past the giant doggo and stealth past the vikings, they're very chonky without +7 weapons and 1000+ HP)
