Demon's Souls has a dense atmosphere, and is unique in this aspect.
Dark Souls has the best map, arguably one of the best ever made in a videogame. It also has the most memorable characters.
Dark Souls II has a lot of new ideas and is huge. It had troubled development and audiovisual is not the best.
Bloodborne is an artistic masterpiece, and has the best environmental design in all of the series.
Dark Souls III is the most rounded in the series. Everything you want to do, PvE, PvP, challenges, you won't be disappointed. Level design is great, but the world compositing is not to the same level of original Dark Souls.
Elden Ring is gargantuan. It's open world is beautiful but what it has in size, it has in equal dose in problems and unbalances.
In the end, you may find it more palatable to complete the games from the release date (1,2,3), to get the most enjoyment out of how its evolved, while you evolve with it.
And if you find yourself needing help, you have an Army of Sunbros that will back you up. ^.^
the iframe issue comes from the fact that in 2 the amount of "frames" where you are invincible while rolling comes from an agility stat that starts very low and with less iframes than in ds1. if you level it high enough (by leveling two specific attributes) rolling will be just as effective again
it's also the easiest for soul farming later on because of bonfire ascetics. pick one boss who gives decent souls and is easy for you to defeat and then you can use a bonfire ascetics to advance just this one area to the next game cycle and fight him again. it's such a fun system because it's also the only dark souls where they allow you to fight the same boss multiple times without going to new game plus.
but for OPs question : i started with 1 because i usually start with the first game in a series. i might have started with demon souls even (even though it's not dark souls) but sadly it's still not on pc
DS I, DS I remake, DS II, and DS II scholar of the last sin have old, outdated controls, and that can easily become a pain in the as*s. In terms of gameplay, DS II Sotfs may be the best compared to the three other early versions including remakes with better graphics.
The mobs are often harder than bosses, which is a special feature i guess
Dark Souls 1/Remastered - The best in the series in my opinion, and if you're patient you can get a hang of it's systems and really start to click with it. There's a lot of freedom, the most a souls game has besides Elden Ring and you'd be hard pressed to find a playstyle that can't work with the right technique.
Dark Souls 2 - Overhated, and is like a sidegrade to Dark Souls 1. Less common PvP but it is more balanced, a less open world but still a fair amount of choice, and some unique mechanics like powerstancing to make different playstyles stand out. Also a lot more forgiveness in DS2, it isn't as much of a constant struggle, more like a journey. (Buy Scholar Of the First Sin, that's the correct version of DS2)
Elden Ring - The big one, it's just Dark Souls 3 but way way better. But, it's super long, so if you're not down for a 50+ hour playthrough then skip it. I skipped out on it, but if you can sit through it I can see that it can be quite enjoyable, lots of things to try, lots of sights to see and fights to have.
Dark Souls 3 - Lots of downgrades for a weird fan game mix between DS1 and Bloodborne. Only certain weapon types can make you have a pleasurable experience and outside of boss fights you're gonna be frustrated. It's the most popular Dark Souls but I think it doesn't deserve it.
I definitely wouldn't start with DS3. It can be very easy or very hard depending on the build you choose. They also obviously took a lot of inspiration from Bloodborne and many of the bosses can be hellishly fast, which isn't necessarily great for a newbie.
i found DS1 world too small, not that interesting compared to the rest honestly. The most unique was that underworld area with them ghosts, that was cool.
I wouldn't stop someone from playing Dark Souls II first. It's a favorite of mine and the pros outweigh the cons.
Play Dark Souls III after Dark Souls Remastered.
A Dark Souls Remastered key is close to $30 right now, and Scholar of The First Sin is about $17.
