Have used sorcerer to games end but you are extended in late game ,but it can be achieved.

I'm almost through my first playthough
If you are new like me you could pick the warrior class and do a strength build if that suits you.
I discovered pretty late that you could upgrade your weapon and the number of healing flask you have at the blacksmith
And you can upgrade the healing itself at the bonfire burning some bones
Learn to dodge and block with shield and the game will not be too difficult
Hope you enjoy this game as much as I do right now

Warrior is a good second.
Knight
Other classes can better suit more experienced players but knight is the easiest to start with. They are tanky and very straighforward. Unlike other fromsoft games knights dont fatroll from the start in DS3, So you get good armor, shield with 100 physical defense from the start, longsword aka 2nd best PvE weapon class (after greatswords) as your starting weapon, and can still dodge roll like a champ.
You can always level up or even respec your character in other directions. Starting class only affects initial stats distrubution and gear. Speaking of which, knight's gear is by far the most expensive.
Unironically pretty good too. Makes discovering new gear a lot more impactful. That, and less souls required to level up early game.
But anyhow, if you're new just pick Knight, then grab the Claymore at High Wall, infuse it with the raw gem you get in the same area, and put the majority of your levels into Vigor until you have 27 VIG aka 1000 HP. The armor set Knight starts with is very good and should serve you well until the mid-game at least. Do NOT change to the cool looking Fallen Knight set, it has garbage stats, and is a common noob trap, because it has a cool edgelord look lmao.
The Claymore is best used two handed, it's generally considered to be the best greatsword in the game. If you want a sword & board build, then farm the Lothric Knights in the same area for their Lothric Knight Straight Sword, which is the best straight sword in the game.
