Although there are better weapons than others... that pretty much only applies in PvP. In PvE, unless if you're using a ♥♥♥♥♥♥♥ broken ss, anything goes!
You're gonna have to specify though. You going for a dex build? Quality? Strength? Maybe sorcery or faith?
If so then I'll give some suggestions but it's kinda up to you man.
dexterity 41
The general rule to keep in mind is normally this:
Faster weapons = More hits with less damage
Slower weapons = Less hits with more damage
I personally played probably 90% of my games with Ultra Greatswords (Black Knight Greatsword ftw) because of the fact that I liked the timing and the staggering they provide. Dex weapons are definitely cool but they involve more timing and manoeuvrability on your part.
My magic caster characters tend to go for the most basic weapons like the Longsword or the Lothric Knight Straight Sword because they do their job admirably when I cannot cast spells or I want to conserve FP. Obviously you also need to consider the fact that Infusions affect damage and element vulnerability.
TL:DR
You need to find a weapon style you like, then look at what weapons in that style you personally like. Work from there, it's all about personal preference.
Hollowslayer GS is fun, the Farron GS is also a blast. Just... don't finish the R1 combo if you're playing PvP. It won't go well.
Claymore is a classic choice. Just infuse it with the refined infusion and you should be good to go!
Wolf Knight's GS is super fun as well.
Gael's GS is fun.
Oh and don't forget all the Curved Greatswords. Literally all of them are fun.
Obviously it's up to preference but these are a few weapons you can try out!
The breakdance sword has a cool moveset. Be careful not to get parried while finishing your combo. Same thing regarding Friede's Great Scythe.
Claymore is good. Can't argue with William Wallace's sword of choice. Freedom!
runner ups for pvp are murky hand scythe and harpe as stated previously, as both do mediocre damage but have the quickstep weapon art and r1s that are extremely difficult to react to and have almost no endlag, and gotthard twinswords one handed because it out ranges all of the above with ok to good damage and extremely difficult to punish r1s as all straight swords have, and it also has r2+r2 combo like a few other shorter straight swords have such as the longsword and the lothric knight straight sword.
