Yes , and at least for DS3, I have survived by stripping all gear and having a full health bar, as a last resort.
But as a rule, the heavier you are, the more damage you take. I mean, look at Havel and the way you can cheese him in both DS1 and DS3.
In DS1, I fight the demon naked with a BK weapon (+20% damage to demons) if NG+ or just lucky or a bleed weapon. In DS2, I try as much as possible to fight the sentinels on top. At least the first 2. Then heal up and drop down with full health.
Falling into a r1 attack might make your character take less damage too. Or at least I noticed so, not sure 100%.
