If you want to pause the game, get to a safe place and quit to the menu for a bit. It's really not that hard.
still I don´t see the point why not have the OPTION.
If you guys prefer that way great, I really prefer the instant PAUSE.... if the OPTION is added you could play your way, I could play mine...more games sold EVERYONE WINS :)
Like it or not, you're not supposed to have a moment's rest in this game until you've earned it. For better or worse that's just how the developers executed their vision for the game. So you can't just wander carelessly into a ♥♥♥♥♥♥♥♥♥, pause the game to take a breath, then start playing again once you've collected yourself. You can pause the game AFTER you get yourself killed.
That's just the way it is and if it's that big of an issue for you, maybe this game isn't for you. I'm not trying to be elitist or protect my "artificial difficulty game", I'm just saying that if you get hung up on stuff like that then you aren't really getting it. On the other hand, if you give it a chance and try to adapt to the game rather than trying to adapt the game to yourself, you might find you really enjoy it for what it is.
Having the option to pause when in offline mode could be good, but my guess is that the devs didn't really want to add it since the game saves your current location and also the fact that this franchise in particular was made around players being always online (for possible invasions and such)
It's like asking 3ds Max to have a pause feature while rendering, or windows while booting.
