How do people beat bosses on the first try?
I keep reading on threads that people managed to beat a boss I struggled with for a few tries on the first try, do they have Touhou level reactions, run a tank STR build or is it just a minority?

there are several possibilities.
Maybe having played the previous chapters you can beat the boss without any complications, knowing the game well.
Or simple luck, as happened to me the first few times I played.
The right class can also have an effect, as different bosses react differently to damage types.

It's disheartening to say the least knowing that I struggled with a boss which some (or most) people had an easy time with.
if it's your first game, go ahead and who cares. In games like these you improve over time, with perseverance and commitment.

I wouldn't be that disheartened. Some people fare better against some bosses, and other not so well.

I am not familiar with builds, but I imagine almost everything is viable within reason with PVE is concern.

I would say keep trying.

The Souls community is divided between elite gamers like me and pathetic casuls. Elite gamers can easily beat bosses first try while casuls can't

as for the OP, builds and damage types matter quite a bit, for example, Oceiros is really weak to lightning (he is dragon-like and his arena has a lot of water) so a faith lightning build will wreck him while a mage will struggle because he is resistant to magic damage

there is also the fact that different players play differently and one playstyle might be better for some particular boss, If you are defensive when fighting the Deacons they will just curse you, if you are passive with Wolnir he will push you to the end of the arena and once he uses the fog you are dead, at the same time if you are really agressive and hit trading you will suffer against bosses like 2nd phase Soul of Cinder and others with long combos because they will win in hit trading every time

Some of them have played Elden Ring for an incredible amount of time and have a good understanding about building the character, using the right weapons and damage types and combat in general.
Some also have seen this fight before on videos, mind you this game is 7 years old...
Some use guides
and some just lie.

And there are also people with natural talent, but they are small in numbers.

Struggled with a lot of bosses on my first playthrough. But it's part of the learning process. 2nd time around, I cut down a lot of tries on various bosses, 1st tried even some of them. It's always a bit dependant on build, equipment and boss patterns though.
Given that Souls games tend to be very skillbased a good player can overcome any challenge with basically anything given to them.

in dark souls 3, there is no such thing as touhou reaction. there is only people who spent 1000 attempts until they got confident enough to try doing everything in 1 attempt. they memorized every single boss attack patterns just like math equations

I am now playing through DS3 for the first time after playing through DS1 remaster, and I find most (NOT ALL) bosses allow you a big enough arena to stay far back and focus on learning boss attacks. Some bosses punish this but most are much easier to avoid attacks for at long range. Once you are comfortable with seeing the windows for countering, you can use hit and run tactics to whittle them down. Personally I just stuck with big 2 handed Bonking sticks (current favorite is Vordt's Great Hammer) because not many bosses are strong vs Bonk, and Vordt's mace also causes frostbite, which slows bosses and makes them take extra Bonk :p They allow you to run (literally sprint) in, get a few Bonks in, run/roll away. This is much safer than trying to trade blows. Not everyone may agree, but I was able to kill most of the bosses on my first try in this game (cleared up to Friede atm, she was NOT one attempt)

Dude, that's just a circlejerk. It doesn't matter if you beat it first try or not, just have fun!

it's not you these games are intentionally designed to mess with you, from software are just jerks my solution is to just not buy there games anymore until they implement difficulty levels and allow the player to learn the game in a more reasonable way.
