I think the Black Knight weapons had something special with Poise but I can't remember.

The more savage the weapon class - the better.
Pretty much all Great class weapons deal a lot of poise damage, but Great Hammers in particular have the highest poisebreak.
So a fully charged heavy two-handed Great Hammer attack is the highest possible poise damage you can deal per singular attack. Ironically they are also the weapons with highest hyperarmor multiplier when attacking, so its very hard to break them out of it.
There are some weapons that claim to have extra poise damage, but frankly i don't know how much it truly matters. Black Knight Weapons have unique heavy attacks exclusive to them that seem to deal some extra and Gundyr's Halberd claims to have some as well, but i doubt it can even reach the same poisebreak as a two-handed Astora Greatsword.
