I would try the Ringed Knight clerics as well, the turtle like enemies with the damaging heal miracle. They drop blessed gems as well, and DLC enemies normally have higher drop rates for them. I tried farming blessed gems at Lothric Castle ages ago and gave up after not getting any.

As far as I remember bless gem is a rare drop from all enemies that drop this thing. So either boost up your item discovery or level up luck.

Winged Knights on top of the archives. You'll also get chunks and Twinaxes.

You can never have enough Twinaxes.
