Why would they simplify dual wielding by taking it out like that?

Nah, DS3 lacks most features that made the previous games good.
Get used to it :^)

There are specific weapons that are dual wield now. You equip them in only one slot, but when you two-hand them, you instead pull another one out of nowhere and have a DS2 style powestance moveset. They're usually named obvious things, like twinblades or twindaggers, but there's exceptions like the cestus. It's also mentioned in the item info.

Honestly I prefer dual wielding in this game. Pretty much each dual wield weapon in this game has really cool unique movesets unlike DS 2 where dual wielded movesets are pretty un appealling and consume way too much stamina. Most weapon classes have at least one dual wield weapon, and with the new infuse system they can be used in any type of build. Currently using gotthards dualblades (straight swords) and absolutely LOVING it. RIP dual ultra greatswords though :(

You can still dual wield, just put the other in your shield slot. I do it with Rapiers, you can even parry with the off hand rapier.

In Ds2 you could power stance every weapon in the game and attack with both at the same time if you pressed R1 in power stance. You can't do that anymore.

This is honestly why I still like DS2's combat better right now. I LOVED power stancing pretty much everything, and I'm really sad to see that go. I'm going to main the Gotthard Twinswords when I get them, but I wish it was still a mix-and-match system.

Combat in DS2 is great but slow...even ds1 and ds 3 lack of feature but it still better than ds 2 bruh .
