Respawning NPC?
The chick who levels me up in firelink shrine died when I accidentally swung once. No clue how to get her back...

Well I just left the game and rejoined as that same guy and the ♥♥♥♥♥ had the nerve to tell me I need her and she can't die so things are good.

If it's like DaS2, there's a gravestone you could use to revive her at cost.

If it's like DaS1, you just learnt a valuable lesson

in the sewer portion by the dilapidated bridge bonfire theres a door (which requires a key from the shrine handmaiden) and in it to the right theres a shrine that absolves you from sins. idk if this just makes hostile npcs friendly again or if it revives them too, but its worth a shot. good luck.

Guys the solution is simply to exit the game and then rejoin as that same character. She says something along the lines of "you need me" and "you can't kill me" and "let me help you".

If it's the same system as in the other games, then yeah that'll stop hostile NPCs from murdering you.

It won't, however, revive them. I'd test out if they respawn, but it's safe to say outside of the firekeeper, assume they stay dead unless there's a stone.

Leave and return to the area to check that.

It's hard to tell. People can be pretty deceptive in these Dark Souls games.

All maidens so far where weak, in Demon's Souls, the fair lady may once have been the most powerfull demon, but she devoted herself to something else and that weakened her, at least physical. In Bloodborne, it's a puppet, brought to life with magic, so it's a bit stronger by nature. In DS2, she is half dragon, so of course she can take a punch. Don't know much about the lore yet, but I doubt that in DS3 that she is much more then a fair lady.
