hey dude, they're weak to fire. use a fire weapon/resin, OR better yet, just lure them into one of the many campfires and bait them into standing in it. very easy

they are actually really really easy. I thought the same thing at first though b/c they were tough at first. when you get pharris bow just split them up and kill 1v1 very easy. weak to pyro and if you get close you can kill fast after you dodge the purple spell.

Get them onto one of those little islands, don't fight in deep mud where you have the slow roll. Hit once, then roll away out of reach and dodge the homing skulls, rinse and repeat. If you can get them on one of the islands that have a fire burning on them, you can lure them into the fire as you dodge around them (just don't roll into the fire yourself :) ).

Make sure to memorize which of the strikes of his is the "mud explosion," since it hits like a truck.

knew about the fire weapons, didnt know about the pit fires around the area causing dmg, nice find. Dragonrider's bow is also very effective at murdering them, jsut head shot em for days
