For me, it's probably gotta be when I found the Zweihander in DaS2 and the message right in front of the chest said, "Beware of giant."

That or "Tight spot ahead" in front of the bent over hollowed below the Undead Burg.

Usually I have a chuckle at the most random ones. In Bloodborne I really like the "You've come to the right place." right before a hard part of the game.
