Best (easiest) class?

A knight/warrior build is the easiest for first play - keep your shield up and you will be fine.
This has held true for every souls game.
Bloodborne was the only exception, but it was a different game.

Also, make sure to pump a bit into dex so you can play around with the lighter weapons.

in ds2 it was cleric and knight for their high starting levels and good stats, in dark souls 1 I think it was knight and scorcerer
since i am not familiar with ds3 mechanics I don't know, but imho, good starting stats and equip doesnt mean a lot, it just makes beginning of the game just a bit more comfortable

The knight. The longsword has always been amazing in the soul's games and it can carry you till the end of the game and it also has good stats for a pure melee build plus the armor looks amazing. Warrior also has good stats for pure melee build.
