From what I can tell it's what you can do to give you a boost early to mid game while building your end game weapon.
I infused fire into my mace and it barely increased the damage at all (maybe it was dumb to put it on a mace, maybe I should have put it on a weapon I was planning to use for at least the medium-term). Which I guess was helpful because I moved onto another weapon and so the lack of scaling didn't hurt.
Also infusions are not permanent. You can simply un-infuse later or switch to another infusion.
Longsword > infuse fire gem > face roll the entire first three acts
Hint:
You lose ~20 odd damage physical
You gain 100+ fire damage
Kinda balances out.
And more important then that: Lots of enemies early game are EXTREMELY WEAK to fire. And I don't mean damage-wise.
Dogs will instantly flip over to fire damage.
Many hollow enemies will sometimes reel in pain at even a single point of fire damage.
All maggot or risen-undead enemies in the Cathedral of the Deep will straight up stunlock to fire weapons. Extremely useful on the maggot enemies down below, and remains useful until you set foot into the cathedral. (Still does fair damage there.)
Dogs actually flip over to pretty much any damage from my experience. Tried it with a club, straight sword, axe, etc.
