DS2 has the most bosses, but some of them are hilariously phoned in.
Ds1 may not have been perfect, since nothing is, however it had good parts about it, which were lost completely by DS3.
The "fast paced" combat is not as well done and actually kinda cringy.
Many of the mechanics just don't do much, especially related heavy set ups which kinda references the previous.
The boss diversity is lacking, no goat demons or anything, its all basically a giant boss in an open area.
The area's could have been great, they were again lacking real thought and care. For the most part.
ALOT of instances where gear on enemies is for them only, you can't kill everything and take their stuff, which again, is annoying. Seeing an item in game and not having a way to get it, is just sad.
Enemies don't feel like they could be you anymore, just a pet peve that enemies seem to run on different mechanics and are just relatively bigger than they used to be.
THis is just stuff off the top of my head, but DS1 did not have anywhere near problems like this. Its not that changing how the game works is the problem, they just have yet to do a good job of it, and it would take an overhaul to get it up to the standards of DS1. Its not impossible, but so many strange decisions that make no sense, so many corners cut, the game is not half as good as DS1 and i can easily debate that with anyone who uses logic.
Technological upgrades and such do not count when comparing how good the game is, tech advances with time and even a terrible game can "haz pretty graffics =D!.."
Don't get me wrong, its good enough to play and still better than alot of its competition, but its no DS1.
Right?
