Will your items/equipment gone when you go into NG+

Im about to finish the game, what stays in NG+ and what goes?

not in NG+ yet but usually you only lose keys and anything relevant to moving the story forward. all your weapons and consumable and spells etc remain

Here is what will carry over during your next playthrough in New Game+ (NG+):

• Soul Level
  
• Souls currently being carried (Fading Soul, Soul of a Hero, Soul of a Proud Knight, etc.)
  
• All your weapons and armor, including 'Item Box' items
  
• Most items and equipment
  
• All pyromancies, sorceries, hexes, and miracles
  
• The number of Estus Flask charges and their upgrade level
  
• Covenant and covenant level
  
• Hollowing
  
• Sins

Anything relating to gameplay advancement such as key items will not be carried over and will have to be re-obtained.

Will shopkeeper stuff (tomes, Greirat's stuff, etc.) and coals have to be reobtained?

They have to be re-obtained so buy whatever you need beforehand.

Basically the only items you will lose are Key Items. All weapons, armours and spells should remain with you.
