I ended up just summoning to get past him, it became a DPS race to kill the clone every single time it appeared.
During the second stage wail on him while he's summoning the clone and quickly finish the clone off to get him to summon another, rinse repeat
Also the Carthus Blood Ring works wonders for dodging
His first phase is the hardest for me cause I cant get a read on him when he extends his combo strings just when you think you got his attack patterns down. Dont get me wrong, the second phase can kill you very easily too but at least I can read his attacks better or try to bait out long range attacks.
The worse part about his second phase is when you get close and the shadow tries to do a move while Sulyvahn is recovering from doing an attack but Sulyvahn is like: No, no thats not what I want to do! I want to do this move instead, and now you are having to deal with 2 different attacks at the same time.
The first part of the fight is truly almost impossible if you try to distance him. Instead, grab a shield, stick to his backside, and circle-strafe him. His attack pattern will change, becoming much more manageable. Most swings won't hit and those that do will do little damage with a good shield. When you're in this position (i.e. on his tail, circling him) he will pull away into two different attack animations: the first is a wide swing with his fire sword and the second is a thrust with the blue one. Learn to recognize them and the timing for when they end. The fire sweep will have one more small sweep afterwards and the thrust may or may not have a follow-up move. You'll be able to get 1-3 shots in at the end of these animations, depending on the speed of your weapon. Personally, I always waited for the fire swing, since it is easy to roll through and always ends with a single follow-up swing, making it predictable.
That'll get you through the first phase of the fight, maybe just 1 or 2 Estus down. (By the way, when you need to heal, heal during those windows when you would otherwise be attacking him). As he moves into the second phase, stay clear of the Pontiff when he's sprawled on the ground, because he generate some sort of explosion.
In the second phase, he may launch into an attack or two, but he'll soon start the summoning sequence. Try to get nice and close and do as much damage to him and his shadow as possible before clearing out (it helps to remember this and be conservative with your stamina right up to the point the shadow starts materializing). I play assassin class with a fast estoc blade, so I would normally get the shadow down to 20% percent health before the summoning would complete, along with a good bit of damage to the Pontiff himself. Make sure to dispatch the shadow as quickly as possible and then go back to strategy number one: become the Pontiff's shadow yourself. (You CAN target the shadow, though whenever he disappears you will lose focus.)
In the second phase you especially want to watch out whenever he leaps into the air: the following attacks are pretty deadly, especially the fire wave.
I hope this made sense and helps you out. I found this fight quite challenging.

At any rate, you can probably use Dragon Crest shield for him to great effect, as it has full physical and very high fire defense. If you have any ranged attacks, the safe time to hit him is while he is just walking. If you're near him, really be mindful of his side sweeps, because he attacks in a 360 degree angle for some reason. One of the few attacks you can punish with several of your own is the slow, delayed overhead smash in phase 1. WHen he splits, if you have a big weapon, try to hit both him and the clone if you can, and then rush him down before he can clone again. Fire and Lightning work against him. If you have a thrust weapon or a weapon that has a thrust attack (i.e. Astora GS/most SS/ A spear, etc.), use that, because he is weak to thrust.
