THe only one I can think of is the Dancer swords, but they are D scaling across the board.

Astora Greatsword gets a A/A for int and faith and C/C for strenght and dexterity when infused with chaos.

People have been working on this table list of all weapons.

A lot get to B/B, longsword, hand axe. Astora Greatsword can get to A/A of the top of my head, but there are probably others.
What may dissapoint you most is that they're the same weapons people use for quality builds, so in the end there's not that much variety.

Are enemies more immune to fire than dark? I could use a good pve sword too

A lot of people complain about the dark sword at the moment being too strong, and one of the reasons is its really strong infusions for such a low requirement weapon. I have a +5 Dark Dark Sword lol, and it hits B/B INT/FTH... Between that and my Witch's locks though, I feel like more things are weak to fire. Could be wrong, personal experience.

Some enemies are super weak to fire, the only resistant ones are at smoldering lake.
