learn his patterns.

do NOT dodge away from him. it's a good way to die. dodge through his attacks, or to the side.

roll to the right and go behind him you will learn his pattern eventually.

He's pretty easy. You wait till he finishes his attacks and then punish him.

Backstab and charge attack while he's getting up, should have enough stamina to roll away, do that twice depending on how good your weapon is and land a few normal hits and you should be fine

I was wondering for the sake of stamina, is it worth investing in it if you have a dex build?
