Should I be going for the heaviest armor I can find?
vitality enough to carry your items, either stay under 30 load for quick roll or under 70 for normal roll.
choose 2 stats for damage (or 1 and invest more in other points for example to carry heavy armor better).
str dex int faith are the dmg stats basically. you can mix them or choose 1 mainly.
str and for example very heavy armor and hp, or str dex "quality" build or dex faith or int faith "pyromancy" etc etc etc
Warrior and knight seem pretty similar - I wonder if knight fits my playstyle better - going in, melee/block/dodge... that kinda thing. Some bow-shootin when I need it. I like how Warrior has a few more hitpoints to start since I die all the time, that's really making my decision for me.
For starting gift, I was thinking ring of life if I do knight, or coin if I choose warrior.

knight starts with a shield that can block 100% dmg, so it can be a bit easier, but try to rely more on dofging it doesnt deplete stamina as much.
And the 1st real map has enemies that drop a 100% shield anyways.
1. Level Vigor and Endurance equally in 5 incremental intervals. These stats do have caps, however and will be worthless to point into after a certain amount. Vigor's HP per point has a gradual soft cap from 1 to 20, a sharper cap above 50, and a hard cap at 99. Endurance's Stamina per point has a soft cap at 40 and a hard cap at 99. Get both of these to 20 first, then start allocating towards your qualifier stats. After you've done that, get your preferential stats in place. After that, dump into Vigor or Endurance until you feel comfortable. Don't overdo it.
2. View Strength, Dex, Intellegence, and Faith as qualifier stats (i.e. this stat allows me to use this weapon/spell/sheild effectively). Only point into these as much that allows the minimum for the require weapon/spell/sheild. For example, if you want to use that Black Knight Sword that requires 20 str and 18 dex, level up to 20 Str and 18 Dex and no more. Figure out what weapon or spell you want to use and build towards that.
3. Attunement and Vitality are preferential stats. Point into Attunemnet for as many spell "slots" you think your character will need to be effective. Obviously if your character is a magic user, you're going to want more slots than a melee build character who may only want one or two for a heal and an offensive spell. Vitality deals with your equipment load. Higher your equipment load, the heavier, more defensive equipment you can wear while still remaining agile. Personally, I like to find a cool looking set of armor that is moderately heavy/light then point my Vitality until I can fast roll. Totally preferential though. If you know your character is gonna be a fatty tank who is gonna weild all the heaviest gear then its probably worth more to point into Vigor and get more HP because youre never gonna fast roll in that stuff.
4. Luck as far as I know, is worthless. Don't allocate here.
You'll find a couple of items later on in the game that increases your equip load so it's not worth putting too many points into vitality unless you want to go full tank.
