obviously ds1 doesn't stand up so well graphically, has major tech issues and the online is ♥♥♥♥ (i ended up cracking the game even though i own it so i could use dsfix properly...)
But it was the revolutionary one which gave us the best video game world i experienced. DS3 is a really good entry point though if you haven't played souls so at this point I'd say play DS3 first and if you are like me you'll end up playing all the others.
Personal enjoyment: DS2>DS3>DS1
I love DS1, I think that's the best one (also played that first) as a piece of art, but didn't like playing it that much (tho I was amazed while playing it). I didn't like DS1 because online was ♥♥♥♥ (as in didn't work). And the controls were ♥♥♥♥ too. Online aspect is really important to me.
DS2 is the worst if we thing about it as art, but the online aspect was great (even with SM system, ice rapier, haveljester, havelyn, and stuff like that). I like DS3 online too, but 2 covenants don't work for me... That's a big negative.
With DLCs the second line gonna change (but if they fixed farron and blue sentinels that would change that too). I'm missing some key fashion souls items, and some weapon diversity (we need something that has elemental base damage and doesn't suck monkey ballz). Also new areas.
