I didn't even know Wolnir could summon forth a sword or spawn skeletons (let alone the larger skeletons with curved blades) until I fought him for the fourth time on an alternate character. If you destroy the two bands on his right arm rather quickly, you can move to the left arm and should be able to hug the left hand throughout most of the fight. If Wolnir unleashes the deathly mist from his mouth, you should be safe if you stay by the left hand. From here on out, RNG takes the wheel. If you're fast enough to take down the last armband, you won't have to worry about anything too threatening.
If you hug the left hand, you only really have to worry about the crawling if you can handle the skeletons no problem. The only thing any of us can really say to help you out is to play it more safely and keep an eye out for when he initiates the crawl. Greediness will get you a mouthful of those deathly toxins. If he's pulling his left arm back into the deathly mist, try not to give into temptation and go for a swing. Attack when his arm moves further away. Good luck!
