Sometimes the first hit bumps them just out of lock on range. It's really annoying.
Not them particularly but grr, the abyss watchers make me want to eat my monitor !
..... Sacred Flame.... which you need to beat the Abyss Watchers to get.... is your suggestion to someone.... having trouble with Abyss Watchers.... ?
Melee builds, it's not near as big of a deal because it's easy to adjust and hit. On my pyro, I waste ashen and valuable time throwing an orb in to the damn sky. I also noticed enemies being able to "duck"'and makes my orb pass over their heads, unharmed, even when it is still locked on target!!
Ok, let's get serious. They are pretty messy, but during the first phase there is an abyss watcher that fights against the boss. Use it to your advantage.
Just channel your Artorias skills....
