You can kill her again, as her dialogue indicates, to get the eyes back and she will forget you gave them (she says this as well). You need to exhaust her dialogue I believe. Then during the post boss ending you can make a choice when you control your character momentarily which splits between the two endings. Back up your save just before the boss fight if you want to see the standard ending, then give her the eyes and back up a save after the final boss to see both other endings leaving just the Lord of Hollows ending to get which is the only good one, imo.
Sadly i finished the game an hour ago but yeah the Lords of Hollows in my plan for NG+. I sort of did the Firekeepers ending by accident. I said no when she asked me ealier if i wanted an age of darkness. Just assumed i was summoning her to link the flame with me in the end.
Ah, when you do get to link the flame post boss there is actually a white summoning glyph next to the fire for just that, summoning her. That is when you can do this if you take the Eye's/Betrayal ending. If you go the Lord of Hollows ending it lets you grab all 4 endings in one go so long as you back up and have the souls to rid hollowing/8 dark sigil.
