As a first time player you might want to go with what is usually called a quality build (melee), str & dex to about 40, and at least 20~30 in vigor and endurance. Maybe some on the carry weight stat too, for heavier gear.
That said, you could easily shape the Assassin into a strength build, if you wanted to.
Assassin is best for DEX/FTH or DEX/INT later on, or just pure DEX because of the starting points if you want to be within the meta. But you can make anything you want from it.
The starting classes are really to help you in early game. You pick a class that fits your play style the best and eventually do what you want. However, for people that like to min/max, there are certain classes that are better for certain things. For instance, you don't want to pick a warrior to play a sorcerer because you'll end up with points in stats you don't need, and end up with a higher level when you're done with your build.
tldr; Pick a class where the end result of your build results in the lowest possible level -- if PvPing. Otherwise, who gives a ♥♥♥♥?
Everything else stated about how you can shape your character however you want is true. However, for a first time player, I'd say assassin or knight is a good choice.
Every time I've used the spook spell, if I'm two handed wielding a weapon, enemies will 180 to look at me from 50 feet away. Even if normally I can slow walk up to them for a backstab wearing the knight's set without the spell.
If I'm one handed wielding, I can still sprint up to them for my free backstab. Just something about two handed wielding while the spook spell is running is screwy though.
I did my testing on this primarily at high wall, with the lothric knight and the potential spoiler's enemy down a locked elevator.
EDIT: Also, the spook spell will protect you from all falls that are not automatically lethal.
This is what prism stones are for. If they break when you toss them over a cliff, it's impossible for anything to survive that distance even with the spook spell.
If they do not break, it's POSSIBLE to survive (especially with spook, or the silvercat ring). but you still take damage normally without those. And prism stones don't care if you don't have enough health to survive the fall in that situation.
I was reminded of this the hard way. "It didn't break, that means I'll barely survive the fall from full health like the last three times I did this. *you died*"
