Yeah, I also think that`s the case.
It`s a reference to the Knight in one of the trailers of Dark souls 1.
The Knight that does "Quiet Resolve" in the trailer is wearing Elite Knight Set...which is coincidently the set that Anri wears, and Anri is the NPC that teaches you this gesture.

Wait A minute... If Anri teaches you the Quet Resolve gesture, and a knight wearing the same set does it in DS1... DOES THAT MEAN ANRI IS IN DS1?! OAO
Much like the Havel set, it's a cult created by Knight Havel long ago, which means not only he used that set.
The Dragon's Tooth and Astora's Straight Sword/Anri's Straight Sword though are pretty much open to interpretation as all copies in all Souls games use those weapons...
