You can also use it to fist bump. I wish there were actual multiperson gestures.

Or it's a reference to what one of the knights in the dark souls 1 trailer does when he leaves the bonfire.

It`s a reference to the Knight in one of the trailers of Dark souls 1.

The Knight that does "Quiet Resolve" in the trailer is wearing Elite Knight Set...which is coincidently the set that Anri wears, and Anri is the NPC that teaches you this gesture.

No, that knight is Oscar of Astora.

Exaclty. The Elite Knight set is just that, a set who, literally, elite ranking knights would use.
Much like the Havel set, it's a cult created by Knight Havel long ago, which means not only he used that set.
The Dragon's Tooth and Astora's Straight Sword/Anri's Straight Sword though are pretty much open to interpretation as all copies in all Souls games use those weapons...
