What level should I be to take on the Abyss watchers?

It's a bit low, but you are still able to do it. People killed all bosses at SL1. So if you are having trouble and don't feel like trying again you can farm some levels.

Alternatively find a summon that knows how to dodge (These may not exist).

Ik this is like 8 years later but I'm using a heavy claymore +4 with 30 strength at lvl 30. I can pretty consistently get passed the first stage but end up dying pretty early in the fire form.
