Consumed Kings Garden and Lothric Castle way too hard?

Hi guys. Im around level 66 and i have uchigatana +7 with a great corvian scyhte +7. I dont know but im dealing relatively low damage to those blue huge knights in consumed kings garden. Is it my character or is those maps are working as intended? My stats is 45 dex 17 str and 20-25 vigor, endurance etc. My katana and scythe are infused with sharp stones or whatever are they.

Knights in the Garden and Castle proper are kind of tanky, yes.

That scythe doesn't deal that much damage and relies on the bleed which those enemies are probably immune to.

Yeah, it's pretty insane. I did much of Lothric alone and it just required a lot of patience and luring. After my first playthrough, I just run pass everything.
