Finally, rolling is like beer, you say you're only gonna take one but you always end up with more. Don't be afraid to double- or tripleroll.
Learn to roll through his attacks, learn his attack patterns and when you should get in a hit or two, learn when you've got an opening to chug some estus etc... basically just git gud.
Though depending on your starting class he might still be quite hard, unless you've picked Knight, Herald or warrior, I'd suggest making a new character and trying to fight him with one of the more beefy starting characters.
Also second phase is where the real fun begins in that fight, so you'll probably need that extra chunk of health and damage.
